Our winemaking philosophy is precision and passion in every aspect of the winemaking process.  The result is inevitably the same – premium quality wine that is consistently great and a true reflection of its terroir and varietal character.

All of our wines are made and bottled on our own estate, so we maintain complete control over the quality of the end product.

Our experienced winemaking team is led by David Thompson, Director of Winery Operations.

With extensive experience garnered from multiple vintages in regions as diverse as Mudgee, Sunraysia, Western Australia, Barossa, Coonawarra Chile and France, David has a simple approach to winemaking at Littore.

"A sound understanding of commercial wine making is vital to this role, combined with experience and knowledge of both domestic and export markets.  It is imperative that we meet and exceed the expectations of our customers in everything we do".

David is assisted by a team of winemakers with a broad background of winemaking including - Daniel Greene, Toby Wanklyn and Kelly Pearson and a dedicated team of Cellar staff.
