Idyll Shiraz

This wine displays an intense array of flavours and aromas including mulberry, cassis and spice with undertones of complex earthiness and subtle oak characters. Soft and extremely supple on the palate, the tannin structure and acid balance of this wine produces an elegant mouth-feel and incredibly long finish. Built to last but approachable now, this wine will continue to evolve as it ages.

Idyll Shiraz

Hand harvested from some of the oldest Shiraz vines in Geelong, the fruit used to produce the 2005 Littore Idyll Vineyard Shiraz displayed incredible concentration of flavour. Naturally fermented by wild yeast cultures, the fruit was plunged by hand throughout the fermentation to ensure gentle extraction of colour and tannin whilst retaining its intense flavours and aromas. After pressing, the wine was transferred to a selection of oak hogsheads where it was matured for 16 months prior to bottling.
