Idyll Shiraz
Hand harvested from some of the oldest Shiraz vines in Geelong, the fruit used to produce the 2005 Littore Idyll Vineyard Shiraz displayed incredible concentration of flavour. Naturally fermented by wild yeast cultures, the fruit was plunged by hand throughout the fermentation to ensure gentle extraction of colour and tannin whilst retaining its intense flavours and aromas. After pressing, the wine was transferred to a selection of oak hogsheads where it was matured for 16 months prior to bottling.
