The fruit used to produce this wine was of such a high quality that the wine almost made itself. Following crushing, the wine was inoculated with yeasts that would retain the aromatics of the grapes whilst aiding the extraction of colour and tannin. American and French oak were used at various stages of the winemaking process to add to the complexity and balance of the finished wine.
